A Recipe for Nachos and Totchos
Today we're trying loaded nachos, with ground beef, cheese (of course), and refried beans. You can also add pico de gallo, jalapenos, avocado, green onions, guacamole, and sour cream. These loaded nachos are hearty and delicious, and you can never go wrong bringing them to a party or gathering of friends and family.
You'll want to make sure you have the following ingredients for the nachos: - ground beef (1 pound) - tortilla chips (12 ounces) - cheddar cheese (8 ounces) - monterey jack cheese (8 ounces) - refried beans (16 ounces) - taco seasoning (2 tablespoons) - chopped onion (half cup) - vegetable oil (1 tablespoon) - medium avocado, diced - sliced jalapeno peppers (1/3 cup) - pico de gallo (1 cup) - scallions - cilantro leaves - sour cream |
Start by heating your oven to 375 degrees. Take a large sheet pan and oil it lightly. In a large skillet, heat the oil on medium heat. Wait until the oil shimmers, then add your onions and cook for around 3 minutes. Next, add your ground beef and cook for around 5 minutes, making sure all of it has browned. Use a spoon or a spatula to mix and break up the beef while it is cooking. Next add the refried beans and taco seasoning. Cook for another minute or so (you want the refried beans to soften).
In a baking pan, add the tortilla chips and spread them out evenly. Add the beef mixture on top of this, then sprinkle the cheddar cheese and Monterey Jack cheese on top of this. Place in oven and bake for around 8 minutes. You want the cheese to be nice and melted. Add the scallions and cilantro leaves for garnish (if you want), and serve with the sour cream and any other condiments that you'd like.
If you want something like nachos but a little more unique, try these so-called totchos, which combines tater tots and nachos. Instead of tortillas, you're going to cover delicious, crispy tater tots with shredded cheese, meat, queso, jalapenos, scallions, salsa, the whole nine yards. There are a lot of food substitutions and additions you can do here, but let's start with this list of ingredients:
- bag of frozen tater tots (32 ounces)
- ground beef, seasoned (1.5 cups)
- shredded pepper jack cheese (2 cups)
- scallions, sliced (1/4 cup)
- diced onion (1/4 cup)
- 3 sliced jalapenos
- salsa (1/3 cup)
You're going to be making chipotle queso to top the totchos with. For that you'll need:
- adobo sauce (1 tablespoon)
- chipotle peppers (2)
- velveeta cheese (1 pound)
- can of diced tomatoes (10 ounces)
Start by getting a baking sheet and lining it with tinfoil. Spread out the tater tots on the sheet and heat the oven to 425 degrees. Bake for around 25 minutes/until the tater tots end up nice and golden brown. Turn halfway through so that things bake evenly.
Now you're going to work on the chipotle queso. Add all the queso ingredients to a microwave-safe bowl and heat until everything is totally melted. Stir periodically as you heat (you can also heat up in a crock pot, etc).
Toss the shredded cheese over the tater tots evenly and heat until the cheese has melted over the tater tots.
